Decaffeinated with the Mountain Water Process, this coffee was grown and produced by Finca Santa Teresa in the southern state of Chiapas in Mexico.
The 320 hectares farm is privately owned by Jorge Esteve, who in 2019, made the switch from producing and selling all his coffee to the commodity market to producing smaller specialty coffee microlots.
This washed Marsellesa variety was sent after harvest to the Descamex decaffeination factory in the state of Veracruz in Mexico as well. There, it underwent the unique non-chemical Mountain Water process that uses the clear pure waters from the highest mountains in Mexico.
