Featured last year as Coffee of the month (February 2021), we're very happy to welcome back the new harvest from Banka in our lineup this year! Banka farm and washing station are located in Yunnan, a province historically famous for its tea production. The large 100 hectares farm, named after two adjacent villages (Banka Yi & Banka Er) currently grows mostly Catimor, a resistant cross variety that often carries a bit of a bad reputation in the coffee world for its lack of cup quality. The lots we've been tasting and roasting these past few years, however, are for us a fantastic example of how tasty Catimor can be if grown and processed with care. For this natural (dry) process, the cherries were first run through an optical sorter and then fermented for two days before being spread on raised beds for drying. The cup displays notes of Dark cherries, caramel and rose water.
